History, culture, landscape, traditions, animals, people, ingredients, even religion all play a part in Italy’s dishes. When I couple that with interacting with producers in their workspaces and joining the Italians in their daily dining rituals in cities, towns, and countrysides, I end up experiencing pure joy.
